Homemade Crispy Egg Rolls

Ingredients
(Makes about 12 egg rolls)

Filling:

2 cups shredded cabbage (or coleslaw mix)

1 cup shredded carrots

½ cup bean sprouts (optional)

½ cup diced mushrooms

3 green onions, thinly sliced

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon oyster sauce (or hoisin sauce as a substitute)

1 teaspoon sesame oil

½ pound ground pork, chicken, or shrimp (optional)

Salt and pepper, to taste

1 tablespoon vegetable oil (for cooking)

For Wrapping and Frying:

12 egg roll wrappers (or spring roll wrappers)

1 tablespoon cornstarch mixed with 2 tablespoons water (for sealing)

Vegetable oil (for frying)
